That's because way too big textures(i'm not sure if it's related mainly to system's/gpu's ram or something in the exe, or both). When it happens you can save, close the game, go in your save folder and add a texture for that part, commonly it's like that because the game didnt manage to save it.

Example:

in your save there's a list of files following the car's one, like this:

PlayerCar0 (this is the main save which have a list of the ids of the installed parts and of the setups to suspension, engine and so on)
PlayerCar0.1
PlayerCar0.2 (these are the texture files, if you add a .jpg after the .# it'll show)
PlayerCar0.3

So you just have to identify which of those files is your car, an easy way to do that is knowing it's position in the car storage.

You'll see one of the .# will be missing(like it may have .1, .3 but not .2) and then just copy-paste one of the other numbers, change the final number to what's missing(keeping the entire name as the rest, so "PlayerCar#.#", rather than "PlayerCar# Copy.#) and enjoy your restored paint.

Sometime you manage to do this in an easier way, just copy the paint from another part and apply it to the "gray" part, this only after restarting the game tho, otherwise it'll blow up(and probably delete all your cars etc).
