Every bmw i've tried to drift with has lifted up and that makes it really hard to slide, some cars drift good and others keep lifting up? why?

this happens cause most of the car mod out there doesnt have custom physics.

but its easy to fix that problem. open the main cfg of your car. the first lines of the cfg are the physic lines. like chassis_frame, chassis_cockpit, chassis_rf. loadbay and engine bay should be also in there.

to fix the problem, just give the chassis frame about 100 kilos more. 50kilos from chassis rf and chassis cokpit lower. then the car shouldnt do that anymore.

here a quick overview

Also, try using less stiff (or more stiff) anti roll bars. Suspension setup makes a big difference.
