I get the UV maps from Assetto corsa content manager when you get into the tab where you can update car previews etc you can open the car in the cm showroom, in there click on the car and the three dots on the texture name and you can extract them.
If your thinking of getting the skins on the cars AC is really easy, just plop in a skinned file into a folder and go.
